Stew!

Hey guys so this a recipe I made today for an oyster/seafood stew. It’s a really good recipe and it’s really flexible as far as ingredients. First I want to say as a disclaimer, I did NOT make this from scratch this was originally a recipe I found on the food network site from Wolfgang Puck that I altered heavily(like adding potatoes, cream and a few other twists)

Oyster/Seafood Stew

 

  • 4 tablespoons (1/2 stick) plus 2 tablespoons butter
  • 3 tablespoons flour
  • 1 cup chopped white onions
  • 1 tablespoon chopped green onion
  • 1/2 cup chopped celery
  • 2 cups half n half 1 cup milk (if shrimp, or ham/chicken version)
  • 2 cups milk, ½ cup half n half (oyster version)
  • 2 dozen oysters, shucked, drained and reserve liquid or 1 lbs pre-cooked salad shrimp per 2 people
  • Salt and cayenne
  • Fresh black pepper
  • 1 tablespoon chopped garlic
  • 1/4 cup chopped finely chopped parsley
  • 1 chopped potato per person
  • Roughly 1 cup mushroom of your choice

Chop then boil potatoes for 15 minutes in a few inches of water in a skillet on high heat. Set aside. In a large saute pan, melt the 4 tablespoons butter. Stir in 2 tbsp of the flour, stirring constantly and cook for 3 to 4 minutes. Add the white onions, green onions, celery and mushrooms and cook for 5 minutes. Stir in the milk, half n half and oyster liquid for oyster version. If doing shrimp or seafood version pour in half and half and milk. Season the mixture with salt, cayenne and black pepper. Bring the liquid up to a simmer. Simmer the liquid for 3 to 4 minutes. Add the oysters or shrimp, potatoes, garlic and parsley. With the addition of the ingredients you may need the remaining tbsp of flour for thickening. Stir this in well and continue to season as needed. Bring the liquid back up to a simmer and cook for 4 to 5 minutes, or until the oysters curl. Stir in the remaining 2 tablespoons butter and remove from the heat. This recipe is for two, feel free to amend the portions for a great family meal. Serve with your choice of crackers or garlic bread.
